Strawberry Parfaits

Strawberry parfaits are incredibly easy and fast desserts to make but can still pass as fancy in a pinch. If you need a “dessert for dummies” recipe this is the one.

Strawberry parfaits are kid-friendly, chocolate-free, and make a perfect Valentine’s Day treat for anyone. Class it up by putting the parfait in a wine glass and adding a strawberry fan to up the ante.

Directions:

Step 1: Buy a Pound Cake

Start by buying a pre-made pound cake (these can be found at any grocery store). Obviously, you could make your own pound cake but then the “fast” qualification for this dessert would disappear.

Step 2: Cut the Pound Cake into Cubes

Cut 1″ slices of pound cake. Then take each slice of pound cake and cut it into 6 cubes. In no way do these cuts have to be accurate.

Step 3: Make Pudding

I then make the pudding by whisking two cups of milk (I use skim but you can use any milk you want except soy) into the pudding mix. It takes about two minutes to thicken up.

You can substitute the cheesecake pudding with any flavor of pudding you prefer (vanilla, chocolate, etc).

Step 4: Slice Strawberries

Now cut the tops off 16 of your strawberries and cut each into 3-4 slices.

Step 5: Assemble

For assembling – I used four of my large wine glasses. Start with a layer of pound cake followed by a layer of pudding then top with strawberry slices. I use four strawberries per glass. Repeat. I am able to get three sections of all the layers in my glasses.

Hint: You can choose to add any ingredients you would like to the layers. Maybe chocolate chips? A little toffee crunch might be enjoyable – get creative!

I top each parfait with a generous helping of whipped cream and a strawberry fan garnish.

Hint: To make strawberry fans, slice almost all the way to the top of the strawberry 3 to 4 times and then spread the strawberry out.

This dessert couldn’t be easier. This recipe is great to make with kids or for kids. Also, if you are not one to usually step foot into the kitchen this dessert is fairly fool-proof.

Hint: I often like to make these parfaits a day in advance so that the pound cake pieces soak in a bit of moisture. I wouldn’t add the whipped cream until just before serving.

Strawberry Parfait

A quick and easy dessert recipe just fancy enough to make for Valentine’s Day, enjoyable for kids and adults.

Servings: 4
Ingredients
  • 12 oz pound cake
  • 3.4 oz instant cheesecake pudding
  • 2 cups milk
  • 20 strawberries
  • 1 can whipped cream
Instructions
  1. Cut the pound cake into ~1″ slices then cut each slice into 6 cubes.

  2. Make the instant cheesecake pudding by whisking the milk and pudding mix for about 2 minutes or until the pudding thickens. 

  3. After removing the tops of 16 strawberries cut each into 3-4 slices.

  4. Assemble the parfaits by layering the ingredients in the following way – pound cake pieces, pudding, strawberries.  How many layers you do will depend on your glass size.  I was able to make four parfaits, each with three sections of the layers.

  5. With the last four strawberries cut each 3-4 times 3/4 of the way up to the green top and fan out to use as a garnish.

  6. Top the parfait with whipped cream and a strawberry fan.
