Mini Heart Fruit Pizza Cookies

My family loves a fruit pizza for any occasion. For Valentine’s Day, we’ve been making a large heart-shaped fruit pizza for years but this year I wanted to make individual mini heart fruit pizza cookies for ease of serving as an after-school snack the week of Valentine’s Day.

Directions;

Step 1: Make the Sugar Cookie Dough and Chill

*You can certainly skip this step and buy pre-made sugar cookie dough if you prefer.

I like using this sugar cookie recipe whenever I make cut-out cookies.

Step 2: Cut Out Hearts and Bake

Preheat the oven to 350. I put a piece of parchment paper or a silicone baking mat on each cookie sheet (I use two).

Roll out the dough on a well-floured surface.

TIP: I ALWAYS roll out cookie dough between two sheets of wax paper, flouring the surface of the paper frequently.

Use a heart-shaped cookie cutter to cut out your cookies. I used a 3″ x 3″ heart and the recipe I used easily made 24 cookies.

Bake for 9 minutes. Let cookies cool completely before frosting.

Step 3: Make the Frosting

Cream together the butter and cream cheese.

Add the powdered sugar and mix until combined. Add the vanilla extract.

Add food coloring if using. I split my frosting into two bowls to make half pink and half red.

Step 4: Frost and Add the Fruit

Frost each cookie and add sliced-up fruit of your choosing. For Valentine’s Day, I like to stick with red and purple colored fruit like strawberries, grapes, raspberries, etc.

Usually, I frost the cookies and then my young kids like to add the fruit in whatever design/combo they want.

Step 5: Refrigerate

You can eat the cookies immediately but I prefer to refrigerate them for at least a few hours, if not overnight. Any cookies you don’t eat should be stored in the refrigerator.

Ingredients
  • 1 batch sugar cookie dough
  • 8 oz cream cheese softened
  • ¼ c butter softened
  • c powdered sugar
  • 1 tsp vanilla extract
  • food coloring (optional)
  • assorted fruit
Instructions
  1. Make the sugar cookie dough and chill for a minimum of two hours or purchase sugar cookie dough pre-made.

  2. Preheat oven to 350 degrees.

  3. Line two cookie sheets with parchment paper or silicone baking mats.

  4. Roll out the sugar cookie dough on lightly floured surface. Use a heart shaped cookie cutter to cut out approximately 24 cookies.

  5. Bake for 9 minutes in preheated oven.

  6. Let cookies cool completely before frosting.

  7. To make frosting cream together the cream cheese and butter. Add the powdered sugar and mix until combined. Add the vanilla extract.

  8. If adding food coloring do so at this time.

  9. Once the cookies are cooled, frost the cookies and add assorted fruit on top.

  10. Store the mini heart fruit pizzas in the refrigerator.
