It’s no secret I have a major obsession with ice cream. In my opinion, the more toppings and mix-ins the better (except nuts!!). I love most Ben & Jerry’s ice cream flavors. One of my favorite flavors (One Love) is rarely available and it features banana ice cream, chocolate chunks, caramel, and graham crackers. I decided that I needed to recreate that flavor at home. Here is my copycat version, I call it Banana Graham.

I use this ice cream maker. It’s essential to freeze the freezer bowl for my ice cream maker. I place the bowl in the freezer the day before I plan to make ice cream. Depending on the type of ice cream maker you have this step may be unnecessary.
Place bananas in a food processor and puree until bananas are a smooth, liquid texture.
In a medium bowl, whisk together the milk and sugar until the sugar dissolves. Stir in heavy cream and banana extract. Now mix in the pureed bananas. Cover and refrigerate for at least 1 – 2 hours.
Typically, I complete this step the same day I place the ice cream maker bowl in the freezer so the cream mixture is refrigerated overnight.
Often I have a can of graham cracker crumbs in my pantry but this time I didn’t so I easily used my food processor again to crush graham crackers into crumbs.
Combine the graham cracker crumbs and sugar. Then add the melted butter and stir until you reach a uniform consistency.
Take the freezer bowl out of the freezer and assemble your ice cream maker. Turn on the machine and pour the cream mixture into the freezer bowl and let it mix until thickened (about 15 minutes).
Add the chocolate chunks and let the ice cream mix for another 5 minutes.
To make the Banana Graham Ice Cream I start by putting a scoop of ice cream into three pint-sized containers. Then I spoon graham cracker crumbs over the ice cream. I don’t use exact amounts when layering the ingredients I just eyeball.
Over the graham cracker crumbs I spoon caramel. I used a very thin caramel sauce and could barely taste it. The next time I make this flavor I will definitely use much thicker caramel.
Repeat the layers until the containers are full. If you enjoy more of a soft-serve ice cream you can certainly eat the banana graham ice cream right away but I prefer to put the ice cream in the freezer for a couple of hours to let it harden more.

Banana ice cream with layers of graham crackers crumbs and caramel plus chocolate chunks mixed in.
Depending on your ice cream maker the first step mioght be to freeze your freezer bowl. I do this overnight.
Next, puree two overly ripe bananas in a food processor.
In a large mixing bowl, whisk the sugar into the milk until sugar has dissolved. Add the banana extract and heavy cream, mix until combined. Add the banana puree and mix. Cover the bowl and place in the refrigerator overnight or for a minimum of two hours.
If you need to make your own graham cracker crumbs now is the time to do that by crushing the graham cracker rectangles in a food processor.
In a small bowl, combine the graham cracker crumbs and sugar. Then add the melted butter and stir until you get a uniform mixture.
Take out your freezer bowl and assemble your ice cream maker. Turn it on and pour the cream mixture into the ice cream maker and let it run for about 15 minutes.
Add the chocolate chunks and let the ice cream maker continue to run for about 5 more minutes. The ice cream will be a soft-serve consistency.
Now you will layer the ice cream and mix-ins in freezer-safe containers. I start with a scoop of ice cream, then graham crackers crumbs, followed by caramel. Repeat the layers until your continers are full.
You can enjoy the ice cream immediately or place it in freezer to harden more.
