I love shrimp lo mein. These days we are getting take-out less and less but I still want this delicious meal more than ever. My solution – make it myself in the simplest (and fastest) way possible. The recipe below is clearly not authentic and doesn’t use fresh ingredients (nap time only lasts so long!) but it satisfies my craving and my family quite enjoys it. I use frozen raw shrimp when I make shrimp lo mein. To thaw, I place the shrimp in a strainer under running cold water. Then I peel the shrimp.
You can certainly use cooked shrimp to save time!
Heat a tablespoon of olive oil in a saucepan over medium-low heat. Place the raw shrimp in the heated oil. Sprinkle the garlic powder over the shrimp. Cook the shrimp on each side for a couple of minutes until pink.
Bring a pot of water to a boil. Place the noodles in the pot and cook for approximately 8 – 9 minutes making sure to stir them a couple of times.
While the noodles are cooking mix the ingredients for the sauce together. If you want to add a little more kick you can add more Sriracha but I think it is already spicy enough.
Would I prefer to use fresh vegetables? Absolutely, but some days I need the quickest meal possible so I can get other to-do items checked off my list during nap time. So I use a package of frozen veggies and for now, it works just fine. Pop it in the microwave and you are good to go.
After the noodles are cooked, drain the water and put the noodles back in the pan. Pour the sauce over the noodles and stir. Add the shrimp and the veggies then give it all a good mix and there you have it – the easiest shrimp lo mein.

If using raw shrimp, heat the oil over medium-low heat in a saucepan. Add the shrimp to the pan, sprinkle the shrimp with garlic powder, and cook on each side 3-4 minutes until pink. If using pre-cooked shrimp, skip this step.
Bring a pot of water to a boil. Add the noodles and cook according to the time listed on the box (approx. 8-9 minutes).
While the noodles are cooking make the sauce by combining the soy sauce, hoisin, sugar, sesame oil, Sriracha, and ginger.
Heat the bag of frozen vegetables in the microwave.
Once the noodles are cooked, drain the water and return the noodles to the pot. Add the sauce, vegetables, shrimp, and give everything a good stir. Enjoy!
