Shrimp Lo Mein

The easiest shrimp lo mein recipe to be found using frozen veggies, shrimp, and a simple sauce to create a popular take-out knockoff.

Ingredients

  • 1 tbsp olive oil
  • 1/2 lb shrimp (peeled and deveined)
  • 1/2 tsp garlic powder
  • 8 oz long thin noodles (lo mein, spaghetti, linguine, etc)
  • 1/4 c soy sauce
  • 2 tbsp hoisin
  • 1 tbsp sugar
  • 2 tsp sesame oil
  • 1/2 tsp Sriracha
  • 1/2 tsp ginger
  • 1 bag Asian medley vegetables (frozen)

Instructions

  1. If using raw shrimp, heat the oil over medium-low heat in a saucepan. Add the shrimp to the pan, sprinkle the shrimp with garlic powder, and cook on each side 3-4 minutes until pink. If using pre-cooked shrimp, skip this step.

  2. Bring a pot of water to a boil. Add the noodles and cook according to the time listed on the box (approx. 8-9 minutes).

  3. While the noodles are cooking make the sauce by combining the soy sauce, hoisin, sugar, sesame oil, Sriracha, and ginger.

  4. Heat the bag of frozen vegetables in the microwave.

  5. Once the noodles are cooked, drain the water and return the noodles to the pot. Add the sauce, vegetables, shrimp, and give everything a good stir. Enjoy!
