
Once you become a parent you accrue a lot of stuff, a LOT of stuff. Packing to go on a trip no longer means throwing a toothbrush and some clothes in a bag for a spontaneous weekend getaway. You can’t do spontaneous with toddlers, not without a travel packing checklist to ensure you don’t forget to bring any essential items. So whether it is a day trip or a two-week vacation, use this helpful guide and checklist to make sure you have everything your toddler will need.

With nice weather finally arriving I can’t wait to grill out more. The Greek kabobs (see Sunday’s meal) reminded me how wonderful it is to grill out and eat in your backyard. Food just tastes better outside, if the weather is nice. I hope you find some new recipes to try out in this weekly meal plan.

Our daughter’s birthday happened right when COVID-19 started affecting our lives. For several days, my husband and I wavered over whether to throw the party or not. When we understood that a stay-at-home order was going to be placed soon it was an easy decision to cancel. We were still able to give our daughter a special day by having her Lion King birthday party just without any of the guests. I think she had a great time!

Recently, I have been trying to incorporate more meatless recipes into our family dinners. First of all, it’s better for us. I very much dislike eating vegetables but I need to be eating healthier so any recipe that disguises the taste of veggies is a winner. Also, it is hard to get meat right now! I have been doing curb-side pick-up of our groceries for months and we rarely get all the meat I order. Plus, it’s predicted that the meat shortage is going to get worse. So here is my newly created (delicious and meatless!) Spinach Mushroom Goat Cheese Quiche.

Reading has saved me during these months of stay-at-home orders. It is something enjoyable that I can do to give myself little breaks during the day. While the girls are watching Disney+, I read. When they go outside to play in the yard, I read. Clearly I have been getting a ton of reading done since we aren’t able to go anywhere. I asked on Instagram (@planningforkeeps if you want to follow!) if I should add more book reviews this month and an overwhelming majority said “yes”. So here they are – four MORE books reviews for May.
