Messy Mallow Bars

It’s summer so I am craving anything featuring s’mores. We don’t have a firepit yet so I looked to see what ingredients I had in my cupboard and this is the recipe I came up with. I am very happy with the results, Messy Mallow Bars is a quick recipe to get your s’mores fix.

   

Step 1

   

Preheat the oven to 350 degrees.

   

Step 2

   

Line a 9×13 pan with aluminum foil and spray with non-stick cooking spray. It is really important to spray the sides of the aluminum foil because that is what the marshmallow will stick to.

Baking Tip: Whenever you need to line a pan with foil flip the pan upside down and form the foil to the shape of the pan. Then once you flip the pan right side up the foil fits in perfectly.

Step 3

   

Make the graham crust. In a medium sized mixing bowl pour the grahams, sugar, and melted butter. Stir together.

Step 4

   

Add approximately half of the graham mixture to the pan and press down with a spoon.

At this point, you can put the pan in the refrigerator to cool so fewer crumbs come up when spooning the marshmallow on but I don’t feel it is a necessary step. #AintNobodyGotTimeForThat

Step 5

Spoon the marshmallow on top of the graham crust. Try to spoon it out to cover the crust somewhat evenly because spreading it won’t be an option since all the crumbs will come up. Precision is not important – these bars are meant to be messy! S’mores are not a dessert to eat properly.

Step 6

   

Shake the entire bag of chocolate chips over the marshmallow fluff. The chocolate will not melt the way I cook these bars.

If you prefer the chocolate melted, I would melt the chocolate in a double boiler or in the microwave before adding on top of the marshmallow fluff.

Step 7

   

Sprinkle the remaining graham mixture over the chocolate.

Step 8

   

Optional: add toppings. I had Golden Graham cereal and mini marshmallows in my pantry so I added them as a topping.

Step 9

   

Bake for approximately 15 – 20 minutes. You can cover the pan with aluminum foil if you would like to bake the bars longer (to have the chocolate melt). Just remember to remove the foil at the end so the topping gets toasted!

Step 10

   

Remove the pan from the oven and let cool for about 10 minutes. If you serve the bars now they will be REALLY MESSY (but still tasty!).

Instead, I move the pan to the refrigerator to continue cooling for a number of hours. To serve, I cut the bars with a pizza cutter. I like my portions large so I cut the bars into 12.

Messy Mallow Bars

A new twist on the classic summer treat – s'mores. This easy dessert recipe will satisfy your s'more craving with a graham crust, marshmallow filling, and chocolate chips. These bars are so good you will quickly need to make a second batch!

Servings: 12 bars
Ingredients
  • 2 1/2 cups graham crumbs
  • 1/2 cup sugar
  • 2 sticks butter melted
  • 13 oz marshmallow creme
  • 2 cups chocolate chips
  • Golden Graham cereal & mini marshmallows (Optional Toppings)
Instructions
  1. Preheat the oven to 350 degrees.

  2. Line a 9×13 pan with aluminum foil.

  3. Spray the foil with non-stick baking spray.

  4. In a medium-sized mixing bowl combine the sugar and graham crumbs.

  5. Add the melted butter to the graham mixture and stir together.

  6. Press half of the graham mixture into the bottom of the pan.

  7. Spoon the marshmallow creme as evenly as possible onto the graham crust.

  8. Sprinkle the chocolate chips over the marshmallow creme.

  9. Distribute the remaining half of the graham mixture over the chocolate chips.

  10. Optional: Add a topping. I typically top the bars with mini marshmallows and Golden Graham cereal.

  11. Bake for 15-20 minutes.

  12. Let cool for at least 10 minutes. If you cut the bars now they will be extremely sticky and messy.

  13. For cleaner cut bars refrigerate the pan for a number of hours before slicing.
