Today I am going to share with you my recipe for Cherry Chocolate Chunk Ice Cream. I’ve always loved Ben & Jerry’s Cherry Garcia flavor and this is my knock-off version. It’s cherry-flavored ice cream with chunks of real cherries and chocolate. This ice cream flavor does not last long in our house.
If I had to give up all food except for one it would be ice cream, hands down. If ice cream was a healthy food I would be the healthiest person on the planet. Unfortunately, for really tasty ice cream my grocery budget tends to take a hit so why not just make my own?
I love this ice cream. It is probably good that my ice cream maker doesn’t allow for a bigger capacity because my pregnant belly is already over the recommended weight gain (and I still have two months to go – yikes!).

Delicious ice cream with chunks of cherries and chocolate.
(Day Before!!) Place the freezer bowl of your ice cream maker in the freezer.
In a medium bowl, whisk to combine milk and sugar until the sugar dissolves. Stir in heavy cream and almond extract. Cover and refrigerate at least 1 - 2 hours.
Take out freezer bowl and assemble your ice cream maker. Turn on your ice cream maker. Pour milk mixture into frozen freezer bowl and let mix until thickened (about 15 min). Add the cherries and chocolate chunks and let mix for another 5 min.
If you like the consistency of the ice cream, enjoy! Otherwise, I usually distribute the ice cream into three of my freezer containers and let it harden for at least two hours.
Optional - Sometimes when scooping the ice cream into the freezer storage containers I add a few layers of Magic Shell to give the ice cream even more chocolatey goodness.

Does the chocolate chunk stay chewable or does it get hard? I used chocolate chips that got hard as a brick that ruined the enjoyment of eating the ice cream. I had to pick the chocolate out. Anyway I didn’t know if I should get milk chocolate or whatever. Thanks

I’ve never had any trouble biting into the chocolate chunks but if you like to use chocolate chips maybe try the mini size next time. Otherwise, shaving (using a vegetable peeler) a baking bar of chocolate would provide flakes which might be an easier texture. My last suggestion is to melt the chocolate chips with some coconut oil (about 1 tablespoon) and drizzle it in the last few minutes of mixing.
