Mini Cherry Chocolate Chip Bread

Cute little pink loaves of bread filled with maraschino cherry chunks and chocolate chips. They make adorable Valentine's Day gifts if you can resist eating them right away.

Servings 4 mini loaves

Ingredients

  • 2 c flour
  • 2 tsp baking powder
  • 1 c sugar
  • 2 eggs
  • 1/2 c vegetable oil
  • 2 t almond extract
  • 1/2 c cherry juice (from the maraschino cherry jar)
  • 1 (10 oz) jar maraschino cherries (chopped)
  • 1/2 c chocolate chips

Instructions

  1. Trace the bottom of a loaf pan on parchment paper four times and cut the rectangles out

  2. Prepare four mini loaf pans by spraying them with non-stick spray and placing the parchment rectangle in the bottom of the pan.

  3. Preheat the oven to 350. 

  4. Combine the flour, baking powder, and sugar.

  5. In a separate bowl mix the eggs, vegetable oil, almond extract, and cherry juice together. 

  6. Slowly add the flour mixture to the wet ingredients.  Do not overmix!

  7. Fold in the cherries and chocolate chips.

  8. Distribute the batter evenly between the four prepared loaf pans. 

  9. Bake for 25-30 minutes or until an inserted toothpick comes out clean.  

  10. Let the pans sit for 10 minutes until turning the loaves of bread out.
