Apple Piecaken

An apple pie baked inside a spice cake with cinnamon frosting and a crumb topping.

Ingredients

Pie Filling

  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon

Pie Crust

  • 2 1/2 cups flour plus extra for flouring surface
  • 1 cup butter cold
  • 6-10 tablespoons ice water

Spice Cake

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter softened
  • 1 tablespoon vanilla extract
  • 1 cup sour cream

Cinnamon Frosting

  • 4 cups powdered sugar
  • 1 cup butter softened
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Crumb Topping

  • 2 tablespoons butter melted
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar

Instructions

Apple Pie

  1. Preheat the oven to 400.

  2. To make the apple pie filling start by mixing the brown sugar, sugar, flour, cornstarch, and cinnamon together in a medium-sized bowl. 

  3. Peel, core, and slice the apple chunks until you have thin, even slices.

  4. Add the apple slices to the sugar mixture and stir until the slices are evenly coated.

  5. Prepare the pie plate by placing a parchment round on the bottom.

  6. Now make the pie crust by slicing the butter into pats.

  7. Using a pastry blender cut in the butter with the flour until the dough has pea-sized chunks. 

  8. Add four tablespoons of ice water to the flour/butter chunks and stir with a fork.

  9. Add one to two tablespoons of ice water at a time until the dough begins to stick together.  You do not want to add too much water!

  10. Make two dough balls similar in size.  Roll out the dough balls in circular shapes until there is about an inch border around the inverted pie plate.

  11. Place one crust in the pie plate and pour in the apple filling.

  12. Place the second crust on top and pinch the two crusts together - there is no need to make any type of decorate edge. 

  13. Cut slits into the top pie crust.

  14. Bake for 45 - 55 minutes or until the filling starts to bubble.

  15. Let the pie cool completely.

Piecaken

  1. Preheat the oven to 350. 

  2. Butter and flour a springform pan.  You may also want to put a parchment round in the bottom of the pan.

  3. In a medium bowl, mix together the flour, baking powder, baking soda, and spices. 

  4. In a separate bowl cream the butter and sugars until light and fluffy.

  5. Add the eggs one at a time.

  6. Beat in the vanilla extract and sour cream.

  7. Slowly add the flour mixture to the sugar mixture.

  8. Pour half the batter into the prepared springform pan.

  9. Flip the cooled pie down onto the batter already in the pan.

  10. Pour the remaining batter on top of the inverted pie.

  11. Bake for 35 minutes then cover the pan with aluminum foil.  Continue baking for an additional 40 - 50 minutes.  As soon as the center of the piecaken is set pull it out of the oven to cool.

Cinnamon Frosting

  1. Beat the powdered sugar and butter together.

  2. Add the milk, vanilla, and cinnamon and continue beating.  Add more milk if you would prefer a thinner consistency. 

  3. Frost the cooled piecaken.

Crumb Topping (optional)

  1. Mix the brown sugar, sugar, flour, and cinnamon together. 

  2. Add the melted butter and stir.

  3. Sprinkle the crumb topping on top of the piecaken.  Enjoy!
