Monday – Mongolian Beef, Rice, and Asian Veggies

For this slow cooker recipe I substituted Antelope because that is what we had in our freezer and it still turned out awesome. I’m sure any meat would suffice.  I purchased this bag of veggies to accompany the meal. 

Tuesday – Strawberry Spinach Salad with Poppyseed Dressing

I’m trying to eat more salads to help me lose the baby weight.  Summer is the perfect time for salads because you can incorporate more fruit.  In my salad, I used romaine lettuce, spinach, strawberries, chopped walnuts, crumbled goat cheese, and poppyseed dressing.

Wednesday – Salmon, Couscous, and Mixed Veggies

We love the Honey-Mustard Salmon recipe in this book.  Fish isn’t my favorite but I try to eat it at least once a week.  This recipe makes me not mind having fish for dinner.  I use this box of couscous.

Thursday – Blueberry Waffles and Smoothies

Our weekly breakfast for dinner meal included a green smoothie.  For each person, I use one frozen banana, 1 cup greens (spinach, whatever), and 1 cup milk (any kind).  This week I used almond milk for the smoothie.  I also like to add some vanilla extract to my waffles.

Friday – Turkey Burgers, Red Potatoes, and Baked Beans

Alex makes the best turkey burgers using the recipe out of this cookbook.  The sauce is so good. Sometimes we use English muffins but this week we just went with hamburger buns.  I love this simple roasted red potatoes recipe to use as a side dish. 

Saturday – Shrimp and Veggie Pesto Pasta

After working on Saturdays, I am usually very hungry and need a simple recipe that is quick for dinner – this recipe does the trick.

Sunday – Leftovers or Go Out

Weekly Dessert(s) – French Silk Pie

I use this recipe but make an oreo crust instead.

*WEEKLY TIP* – If you aren’t a fan of crushing your own cookies or graham crackers to make a dessert crust, you can buy the crumbs already crushed.
