Spinach and Ricotta Stuffed Manicotti

I make this recipe a lot. First of all, everyone in my family will eat it (a huge win when dealing with a picky toddler!). Second of all, I can prepare the entire dish during nap time to heat up later. Lastly, spinach and ricotta stuffed manicotti shells are delicious!

Pumpkin Caramel Lava Cake

It took a few attempts but I finally perfected a pumpkin caramel lava cake. A personal-sized pumpkin cake with a molten lava caramel center is perfection. In the words of my toddler who tried the cake today, “It’s my favorite.” – though she has said that about a handful of my desserts.

Mini Oatmeal Cream Pie Cookie Cups

I promised you the mini version of Oatmeal Cream Pie Cookie Cups and here it is! This bite-size version might be even better than the original recipe because these mini cookie cups are easier to eat (especially for children). The delicious flavors of an oatmeal cream pie easily made in a mini muffin pan. I hope you like them!

Baked Sausage Rolls

Baked sausage rolls have quickly become a family favorite in our household. Whenever I find a new recipe that the whole family loves I always tweak it to make the steps easier and faster.

This recipe I adapted from another blogger who continuously puts out amazing recipes. Her recipe for Australian Sausage Rolls was my inspiration but I altered some ingredients and their amounts to make it easier for me to make over and over again.

You’ll notice I only use 1/2 lb of sweet Italian sausage. What do you do with the other half? I typically put in another dish I make that week – pasta, egg dish, etc. Don’t let it go to waste!

I hope you like them. We can’t get enough of these scrumptious baked sausage rolls.

Pig Birthday Cake

Our daughter’s 2nd birthday party was farm themed and I knew I wanted to make some type of barnyard animal cake to top off the day. I considered making a cow and a horse but my bright husband suggested a pig because you only need one color frosting for piping. Done!

We had to switch the party from Sunday to Saturday so I had one less day of prep. I have learned over time that keeping things simple is the smart way to go. See instructions below for how to create an easy pig birthday cake (or pig cake for any farm-themed occassion).
