Our daughter’s 2nd birthday party was farm themed and I knew I wanted to make some type of barnyard animal cake to top off the day. I considered making a cow and a horse but my bright husband suggested a pig because you only need one color frosting for piping. Done!

We had to switch the party from Sunday to Saturday so I had one less day of prep. I have learned over time that keeping things simple is the smart way to go. See instructions below for how to create an easy pig birthday cake (or pig cake for any farm-themed occassion).

It should be obvious by now that I have a major sweet tooth. As I was grocery shopping last week I spotted that Ben & Jerry’s has re-released one of my favorite flavors, One Love. Banana ice cream with caramel and graham cracker swirls in it, I mean come on. One pint of this delicious flavor combo was not enough!
Banoffee pie to the rescue. A pie that is not very popular in the U.S. but I happen to love it. This no-bake pie has a graham cracker crust, a layer of sliced bananas, caramel sauce, whipped cream, and toffee bits. Why don’t I make this dessert more often? Probably because I’m too busy making even more desserts.

I love oatmeal desserts. Ben & Jerry’s Oat of This Swirled ice cream flavor has been my favorite since it came out. I often make oatmeal cream pie sandwich cookies but you have to make a ton of cookies and then end up with half when you sandwich them together.
I decided to invent the oatmeal cream pie cookie cup and I am very happy with the results. This recipe is super easy to make and the cookies are very filling. I promise to type up the mini version soon!

With the holidays just around the corner, I wanted to attempt a dessert that would blow the socks off friends and family. The piecaken to the rescue!! Similar to the turducken, a piecaken is made by baking a pie inside a cake – creating the best of both worlds.
I have attempted this recipe twice. The first trial was a miserable failure, the second pretty good. With a third attempt, I’m sure my recipe would be perfected but I wanted to get these instructions to you in case you wanted to give it a try for this Thanksgiving. Below I’ll fill you in on my tips and tricks for creating a piecaken, as well include some cheater versions that will save you a lot of time. I’ve included the recipe I made up but please note it is not perfected yet but I do explain what I would do to improve it. Happy baking!
