
I promised you the mini version of Oatmeal Cream Pie Cookie Cups and here it is! This bite-size version might be even better than the original recipe because these mini cookie cups are easier to eat (especially for children). The delicious flavors of an oatmeal cream pie easily made in a mini muffin pan. I hope you like them!

For last month’s book club I had to make a southern food to fit the theme of the night. Whenever my family goes to Florida (though it’s been many years for me) we make a point to “test out” the key lime pie at basically every restaurant we go to. We are always on the search for the best one, though none are bad.
I thought I should try making key lime pie cupcakes. Please note – I understand that in no way should this recipe be called “key lime” maybe I should just name it “lime cupcakes” but for some reason that doesn’t sound appetizing to me. These fun Halloween ice cream treats are not only tasty but great to make ahead of time for a party. They are sure to be a hit with kids (plus you could always make a boozy version for the adults!).

Truth – I used to eat maraschino cherries straight from the jar as an after-school snack. I’m sure my mother didn’t know. Truth – On occasion, I STILL eat maraschino cherries straight from the jar. I can’t help it! I love them. These loaves of mini cherry chocolate chip bread are perfect to give as Valentine’s gifts or to keep and eat for yourself. I find that by making mini bread loaves I am better able to portion-control instead of devouring it all immediately.
