I have to be honest when I’m pregnant, meal planning and cooking dinners are the last things I want to be doing. That’s why I create these family weekly meal plans. For the weeks when I do not have the time or energy to sit down and meal plan I can just pull up these planned out weekly dinners, print off the accompanying grocery list, and I am good to go. I hope these weekly meal plans make your life a little easier too!

Monday – Meatless Monday

Tuscan Tortellini and Italian Bread

   

I love pasta and one of my favorite pastas is tortellini. Bonus – I am able to get my kids to eat some vegetables when I serve them this delicious Creamy Tuscan Tortellini recipe.

   

Tuesday – Slow Cooker Recipe

Pasta e Fagioli Soup and Italian Bread

   

When the weather turns colder you might as well has pasta and bread two nights in a row. This Slow Cooker Pasta e Fagioli Soup is yummy and freezes great.

   

Wednesday – Breakfast for Dinner

S’mores Waffles and Strawberries

   

I had a s’mores waffle the day after my sister’s wedding and it was delicious. I can’t believe it took me this long to create one myself.

I’m all about quick and easy meals these days so I chose to use Hungry Jack pancake mix but you obviously could make the pancake mix from scratch.

S’mores Waffle

1 c pancake mix

1 c graham crumbs

1 1/4 c water

1/4 c vegetable oil

1 egg

chocolate sauce

mini marshmallows

Mix together the pancake mix, graham crumbs, water, oil, and egg. Make waffles like you normally would.

When the waffle is ready, place it on a baking sheet and swirl the chocolate sauce on top. Sprinkle mini marshmallows over the chocolate sauce and pop the pan in the oven to broil on low in order to toast the marshmallows. Watch carefully so the marshmallows don’t burn!

Stromboli and Salad

   

Everybody in my family loves this Stromboli recipe – even my picky toddlers. I often serve it with marinara sauce for dipping.

This time, I used a refrigerated pizza dough and the stromboli still turned out great. If you choose to make your pizza dough from scratch make sure to add those extra ingredients to the grocery list.

Also, add ingredients you like to put in your side salads to the list.

Shrimp Boil, Coleslaw, and Blueberries

   

I love seafood. Sometimes I wish I lived on the east coast to enjoy fresh seafood regularly (and less expensively). This recipe for Sheet Pan Shrimp Boil is easy, delicious, and helps me get my seafood craving fix.

I always tend to buy frozen raw shrimp to have on hand at all times but use whatever shrimp you want.

   

Weekly Dessert

Oatmeal Squares

   

I was intrigued by this recipe for No-Bake Chocolate Oat Bars because I read that they are great to freeze. Now that I have a chest freezer I want to fill it up!

I did make a few slight changes after reading reviews (my grocery list reflects those changes).

First of all, I doubled the recipe to make a 9×13 pan and I’m glad I did because my family ate these fast! Also, I used only 1 1/2 c butter and added 1/4 c milk. Finally, I reserved some of the chocolate/peanut butter mixture to drizzle on top of the bars. I then let the bars cool overnight before slicing them.
