Easy Weekly Meals Your Family Will Love – Week #2

Here is the second round of family meals I’ve planned to make your lives simpler. Who has time to meal plan? I don’t know about you, but it takes me forever to select the week’s meal and write the shopping list. To have a weekly meal plan with five kid-friendly dinners and a dessert already decided with an accompanying grocery shopping list (sign-up below for FREE access to my resource library!) makes me really happy.

   

Monday – Meatless Monday

Spinach and Ricotta Stuffed Manicotti, Broccoli, and Bread

   

Anyone who has been invited for dinner over at our house has probably had my spinach and ricotta stuffed manicotti. It’s my go-to for dinner guests and I’ll tell you why. First of all, it is delicious. Second of all, it can be made ahead of time and heated up very quickly while guests are getting drinks. Lastly, the recipe is vegetarian which is helpful if you don’t know if your guests eat meat.

   

Tuesday – Slow Cooker Recipe

Chicken Enchilada Soup

   

Once fall hits I am in soup mode. Not that soup can’t be enjoyed at any time of the year! Chicken enchilada soup is so easy to make in the slow cooker and adds some variety to my usual soup recipes.

   

Wednesday – Breakfast for Dinner

Creme Brulee French Toast with Raspberries

   

I tend to make super sugary meals when my husband won’t be home for dinner. Is it a bribe to get my kids to eat? Is it an excuse for me to have dessert for dinner? It doesn’t matter, creme brulee french toast is scrumptious and can be enjoyed for any meal of the day.

   

Thursday – Leftovers

Turkey Burgers, Corn, and Pickles

   

Turkey burgers may sound a little basic for a favorite meal but it’s what you add to them that makes the burgers special. First, make sure you season the burgers (I just randomly select spices from the spice drawer). Then we like to add cheese, avocado, and a mayo/chipotle sauce. Get creative and decide what toppings your family likes best (just make sure to add the ingredients to the shopping list!).

   

Saturday – Eat Out or Order In

One of our first “official” dates as a couple was at PF Chang’s and we had the lettuce wraps – they’ve been a favorite ever since. Get some frozen potstickers as a side and I call it a meal.

   

Weekly Dessert

Banoffee Pie

   

This dessert combines some of my favorite flavors. Banoffee pie is a no-bake pie with banana and caramel topped with cool whip and toffee bits. When I have that first taste I’m always reminded that I should make it more often.
