This was our first Easter (and holiday) with baby Cora. I am thankful we had this holiday to adjust to being a family of 4 before we took on trying to celebrate a holiday with ALL of our families. Don’t get me wrong, it would have been wonderful to have seen everyone but I think I would have collapsed from exhaustion.
It sure takes longer to prepare a meal when you have to feed your baby every 2-3 hours. Cora also decided to have major spit-up episodes this day resulting in three outfit changes. But I am not complaining. We have a beautiful baby girl and that is all I could ever wish for.
For our meal we had; ham, deviled eggs, mashed potatoes, asparagus, fruit salad, and coconut cream cheesecake. This was the first time I had tried out this recipe and the cheesecake turned out awesome! Even though we are only two people, have no doubt that this dessert will be gone in a just a few short days.
Thank goodness for technology. All of our families were able to Skype and see Cora for her first holiday. We haven’t seen many of our relatives since Tara’s wedding last August. We are looking forward to planning a Wisconsin weekend in June.
